I almost feel it’s becoming a running joke that I love oats so much, but here I am again raving about something else that can be done with oats. I am raving with good reason though, because granola bars are expensive! Granola bars, protein bars, snack bars, almost anything healthy and portable is almost $1 a bar. That’s a bit of a rip off, especially when it’s so easy to make granola bars yourself. Plus, when you make them yourself, there are endless varieties and ingredients to add and experiment with.
I know I don’t plan on making this the same way twice.
3/4 cup rolled oats
1/2 cup brown sugar
3 tbs butter
2 tbs honey
1/2 tsp vanilla
1 cup your favorite combination of nuts/seed/dried fruit (I used sunflower seeds, an organic trailmix, shredded coconut, and dried cranberries)
- Heat oven to 350 degrees. Grease a small baking sheet and mix together oats and dried fruit/nuts. Arrange oat mixture on the greased baking sheet in a thin layer and bake for 10 mins or until lightly toasted.
- In a small saucepan heat butter, brown sugar, honey, and vanilla stirring constantly until thickened and boiling.
- In a medium sized bowl, mix together the butter mixture and the oat mixture until the oats are coated. Grease the baking sheet again and spoon the mixture in a smooth single layer.
- Bake at 350 degrees for 10 minutes.
- Let cool. Cut. Enjoy.
